AMPELOGRAFIC BASE OF THE VINEYARDS: Exclusively native vines, consisting mainly of various selected clones of SANGIOVESE, CANAIOLO BLACK, CILIEGIOLO and COLORINO.
VINIFICATION: In stainless steel containers using the latest in modern technology.
TECHNIQUES OF AGING: For the refining (as for the choice of vines) a careful and precise choice was made to promote the most enviable features of our vines. Without the help of techniques such as the use of barrels which tend to standardize odors and flavors, the Chianti Classico Silvio Chiostri Riserva instead is distinguished by the technique of aging in large oak casks of 10 and 20 hl for a minimum period of eight months, with a further refinement in the bottle for at least 6 to 10 months before being sold. Only at this point our Chianti Classico becomes Chianti Classico Silvio Chiostri Riserva.
These business decisions that have been taken have proved to achieve the results in obtaining a wine which is genuine and elegant, where its complex “organolettiche” characteristics enhance the land, the vines, spicy scents of the typical Chianti environment.
CHARACTERISTICS OF THE WINE:
The strength of the “Silvio Chiostri Chianti Classico Riserva 2010” is the density of its extracts, its impressive concentration promotes duration of taste and aromatic flavor. Then qualifying is the balance of taste: a slight softness that perfectly counteracts the excellent acid nerve and a tannic structuring plug, slightly bittering. Decisive is the spicy wood and relevant the freshness of the alive and tonic fruit. The wood scent gives both a smooth and mellow flavor, so it is always a pleasure to taste a balsamic scent so profoundly deep with its rich ripe black cherry mellowness. Perfect and pleasant companion of many dishes, especially red meat, game, cheese and spicy, but not only, with a glass that, intense and tannic, increases in value.
